Observation (CORRECTED DURING INSPECTION): 1. Gravy and lemon sauce were found stored in small stainless steel containers at room temperature. Temperatures registered 40-44 C. The items were held for about 1 hour

2. Cooked rice in a deep pan found stored at room temperature. (Internal temp. 53 C).
Corrective Action(s): 1. All hot held items must be stored in pans that are directly exposed to steam in the warmer. Must be maintained at 60 C or hotter at all times.

2. Rice must be either kept hot in the hot holding unit (at or above 60 C) OR cooled immediately in shallow pans and refrigerated. Avoid keeping potentially hazardous items at room temperature for more than 2 hours.
