Observation (CORRECTED DURING INSPECTION): There are food containers and boxes left on the ground of the walk-in freezer.
Corrective Action(s): All foods must be stored atleast 6 inches from the ground to prevent contamination. Reviewed proper storage practices with kitchen staff.

Observation: There are mouse droppings in the kitchen along the wall of the back line area.
Corrective Action(s): The droppings need to be removed and then the entire back line area needs to be sanitized with chlorine (bleach) solution.

Observation (CORRECTED DURING INSPECTION): The back door in the kitchen was left open at the time of inspection.
Corrective Action(s): The back door must be closed at all times, unless a screen door is installed. Furthermore, leaving the back door open may be the cause for presence of pests. Ensure all employees know to keep the door closed. Post a sign that says to keep the door closed at all times.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) The entire perimter of the premise has debris, food, dust, and waste build up, especially hard to reach areas. 2) The fume hood has build up of grease and dust. 3) The ice machine has visible mold build up.
Corrective Action(s): 1) The entire premise needs a DEEP CLEANING. All the equipment that has wheels should be pulled out so that areas close to the perimeter can be cleaned efficiently. There needs to be a proper cleaning schdule that everyone follows to prevent severe build up. If this is not done, it may lead to a worse pest problem. 2) Schedule a service date for the fume hood to properly get cleaned because the grease and dust may fall on food therefore contaminating it. 3) Empty the ice machine, clean the mold build up, and sanitize it with 100-200 ppm Chlorine (bleach) solution.

Observation: The walk in freezer has a large accumulation of ice due to a broken gasket.
Corrective Action(s): Replace the broken gasket and clean up the accumulated ice because it can contaminate the food and cause employees to slip.
