Observation: Mouse droppings and urine noted in kitchen and dry storage area along the floor up against the wall. This was noted in the previous routine inspection.
Corrective Action(s): Clean up droppings and disinfect areas. Continue to monitor for further acitivity and continue to clean and disinfect when droppings noted. Pest control contract is in place with service twice per month. Report from previous service (Sept.1/17) shown at the time of the inspection. Correction date: Sept. 14/17

Comments

-General sanitation is satisfactory.
-Handsinks supplied with liquid soap and paper towel. One handsink was noted being used for coffee preparation. Use food preparation sink instead so that handsink is always available for handwashing.
-Walk-in cooler was at 4C.
-Raw meats were stored underneath ready to eat items.
-Food items in walk-in cooler were covered/wrapped to prevent contamination
-Walk-in freezer was at -17C
-Temperatures of cooler, freezer and dishwasher wash/rinse are being monitored and recorded
-High temperature dishwasher met sanitizing temperature requirement. Final rinse temperature was 73.9C at dish surface as measured with min/max thermometer.
-Quats sanitizer (200ppm) present for sanitizing food contact surfaces.
-Most dry goods in dry storage area are in pest proof containers.
*Senior Operations Leader reported ceiling is being replaced as per previous routine inspection. It is anticipated to be complete within 2 months. Ceiling must be smooth, non-absorbent, easily cleanable, and light in colour.
