Observation: Noted sauces (BBQ sauce, tomato ...) without cover and flies were inside.
Corrective Action(s): Discard these contaminated sauces and cover all foods at all time.

Observation: Noted a large number of flies (fruit flies and couple house flies) around handwash sink, dishwashing sink, pizza cooler and topping area.
Corrective Action(s): Control the issue and discuss with a pest control professional to rectify.

Comments

All coolers <= 4 deg C, freezers at <= -18 deg C.
-Thermometers are available.
- Temperature logs available on-site and maintained up to date.
- Soap and paper towels at handsinks.
- 3 compartment sink with Quats sanitizer available (200 ppm Quats at third sink)
-Quats sanitizer in spray bottle >200ppm
- General sanitation ok- more attention is required for floor in walk in cooler and around hand wash sink
-Good personal hygiene noted by staff (wearing finger cot, washing hands, hair control...)
