2.sushi rolls in display case were 13 C display cooler was turned off for almost 3 hours.
Corrective Action(s): 1. Must keep pre-made bento boxes in the cooler until served
2. Must keep display cooler on and below 4 C to ensure sushi rolls are kept below 4 C.
