Walk-in cooler very organized - All freezers are -18C or colder - Gravy, patties and other hot foods are being maintained at 60C or hotter - Wiping cloths being stored in sanitizer with a 100ppm chlorine residual - Third compartment of sink contained sanitizer with a 200ppm quat residual - Dishwasher final rinse had a 100ppm chlorine residual at plate surface - Liquid soap and paper towel at handsinks - Temperature logs are being maintained - Time temperature monitoring of foods held at room temperature are being tracked - General sanitation is overall satisfactory - No sign of pests at time of inspection
