Observation (CORRECTED DURING INSPECTION): Cleaning rags stored on food contact surfaces. Moisture and food debris build up may promote microbial growth and cross contaminate surfaces.
Corrective action: Store rags in a sanitizer solution (either QUAT @ 200ppm or Chlorine @ 100ppm). Change solution at most every 2 hours.
