Observation: There was no probe thermometer onsite to verify meats are cooked and temperature of soup.
Corrective Action(s): Acquire a thermometer to monitor cooking temperatures of foods and hot holding temperatres of soups.

All fridges are 4 degrees Celsius or colder.
All freezers are -18 degrees Celsius or colder.
Soups are being hot held at 60 degrees Celsius or hotter.
Liquid soap and paper towel available at handsinks.
Dishwasher final rinse reached 72 degrees Celsius at the plate surface. Ensure that it is being monitored and included as part of the temperature logs.
Note: temperature logs sheets were provided that have the correct temperatures (critical limits) for hot holding and the dishwasher that need to be met.
