Observation (CORRECTED DURING INSPECTION): The orange salad dryer was stored away with dried salad bits on the spinning basket. The dryer was removed from the storage shelf to be washed and sanitized again.

Observation (CORRECTED DURING INSPECTION): Observed an open bag of uncooked brown rice stored under the hand washing paper towel dispenser. The bag of rice was covered and removed from this location.

Observation: Display cooler with cooked pasta was measured at 7.4C. Its bottom compartment measured at 6.9C. Display cooler with toppings was measured at 9C. Its bottom compartment was measured at 4C. Temperature log is not available for review.
Corrective Action(s): Service the coolers. Coolers must be able to keep foods at or below 4C at all time. DO NOT store any potentially hazardous foods in the display coolers until they are serviced by a technician and verified by the district health inspector. Correct this by: immediately.

General sanitation is adequate.
Walk in cooler measured at 4C.
Walk in freezer measured at -18C.
Drink cooler measured at 4C.
Hot holding (soups and quinoa) measured at 60C.
QUATS sanitizer bottle measured at 200ppm as per test strip.
Dry storage practice is adequate.
No sign of recent pest activity noted at this time.
Ice cream machine not in service.
Deli slicer in sanitary condition.
3 compartment sinks well equipped for manual dishwashing.

Signature was not collected due to COVID 19.
