Observation: 1.Meat slicer noted covered in meat debris and splatter after use during lunch rush.Operator notes slicer is cleaned and sanitized at the end of the day.
2. Both sides of dishwasher noted with food debris and dirty dishes
Corrective Action(s): Ensure kitchen is maintained in sanitary condition at all times during operation.
1. Meat slicer must be cleaned and sanitized every 4 hours minimum. Wash and sanitize unit between lunch and dinner rush and again at the end of day minimum.

2. Dishwashing practice: dirty to clean. One side of dishwasher can be the "dirty" side and the other side the "clean" side (where the dishes end up after coming out of the dishwasher). Maintain this side in a sanitary condition.

Observation (CORRECTED DURING INSPECTION): Handsink is fully supplied however it is blocked by a plastic container full of green veggies on top of the compartment and 3 buckets of soaked veggies in front of the sink on the floor.
Corrective Action(s): Ensure the handsink is readily available for use by food handlers. Keep the sink fully supplied and free of obstructions.
Food handlers should regularly wash their hands with soap and hot water and paper towel between tasks and when resuming/starting work after a smoke break/coffee break/start work/washroom/etc.

1. Ventilation hood panels above cooking equipment - heavy black grease accumulation
2. inside coolers - food debris splatter in door tracks and on shelves
3. Hard to reach areas - corners, under cooking equipment and coolers
Corrective Action(s): Ensure all areas of the kitchen and bar are maintained in sanitary condition.

Corrective Action(s): Ensure cardboard is not used to line shelves and replace regular cleaning of surfaces. Remove all cardboard where regular cleaning would suffice. Any cardboard used in sensitive areas must be replaced daily. DO NOT let the cardboard pile up in storage areas as space is limited and can become harborage areas for pests.
