Observation (CORRECTED DURING INSPECTION): Observed chilli that had just been put on the line at 54C internal temperature.
Corrective Action(s): Foods must be reheated to a minimum of 74C. Then you may hot hold at 60C or above. Supervisor removed chilli at time of inspection and reheated to 74C.

Ensure all staff are trainined in the reheating procedure and the use of probe thermometers. Check the food item has reached 74C prior to serving.
