Observation: 1.Front edge of counter in front of handsink across from display cooler is held together with clear tape.
2. Paper towel used to cover sealed wooden shelves and then covered with plastic.
3. Paint chipping off wall under knife holder
4. Office catalogue used to absorb bacon grease - re-used, noticeably moisture damaged.
Corrective Action(s): All surfaces in kitchen are smooth, durable, easy to clean and non-absorbent.
1. Replace/ re-glue vinyl cover and remove tape.
2. Remove paper towel which can trap moisture and can not be cleaned. If wood must be covered then cover with just plastic. Clean regularity.
3. Install durable material (hard plastic, tile, stainless steel sheet) to wall under knife points to protect wall from further damage.
4. Do not use any paper material (catalogs) as absorbent materials in kitchen, do not re-use items that can not be cleaned. ***Catalogue discarded during inspection.

Comments

Routine:
-Handsink supplied with liquid soap and paper towel
-High temperature dishwasher met sanitizing requirement. Rinse temp. at dish surface was 72.8 C at the dish surface.
-Bleach sanitizer solution (100 ppm) present and in use with wiping cloths for food contact surfaces and counters.
-Temperatures of cold holding units were acceptable:
-Freezer was at -8 C
-Back fridge was 4 C
-Small prep cooler was 3 C
-Front fridge was 4 C
-Display cooler was 3 C
-Thermometers were present in coolers
-No signs of pest activity noted at the time of the inspection.
-General sanitation of premises was satisfactory
