Observation: Sandwich display cooler in the sandwich prep area registered 6.5C at the time of inspection (defrost cycle).
Corrective Action(s): Adjust the cooler as necessary so that it is capable of maintaining food items at 4 C/40 F at all times. Corrective actions must be taken if temperature deviations are noticed during temperature monitoring (Immediately).

Comments

Ice maker has been thoroughly cleaned and sanitized.
Floor around the ice machine, floor drain and floor in the walk-in cooler and dry storage areas have been cleaned.
All food items are now stored 6 inches off the floor.
-Air vents in majority of the coolers have been cleaned.
-Floor underneath the deli sandwich display cooler has been cleaned.
-A new drain board will be provided on the left hand side of the double sink.
-Bulletin board with thumb tacks will be removed from near the double wash sink.
-Counter top edge across from the deli cooler has been repaired. Good.
-Hot holding of chickens now 60 C or hotter. Good.
-Commercial cleaning chemicals are now being used for cleaning floors.


Following tasks are still outstanding:
1. Clean under the air vents in the display cooler across from the deli and sandwich display cooler.
Ensure to remove food build up from the cooler drains.
2. Remove all dried food build up from the junctions between the deli cooler and floor behind the cooler. Re-install the vinyl coving when cleaning is complete.

* Temperature logs are incomplete. If cooler temperature is higher than the recommended range (0-4 degrees C), corrective actions must be taken.
* Please submit a revised copy of the sanitation plan outlining cleaning procedures for all coolers, ice maker, meat slicers and other food equipment.
