Observation (CORRECTED DURING INSPECTION):
- Bleach sanitizers measured too strong - over 200ppm.
Corrective Action(s):
- Ensure to mix correct ratio to reach 100-200ppm bleach sanitizer. Ratio is 15mL (1 tbsp) of bleach to 4L (1 Gal) of water. Ensure to clean the sanitizer bucket as well when replenishing the solution.

- Cardboards observed to be in use as liners for shelving racks.
Corrective Action(s):
- Do not use cardboards as liners. Cardboards were removed at the time of inspection. You can use metal, plastic or other materials that can be easily cleaned as liners.

- All coolers at 4C or below.
- Chest freezer at -18C or below.
- No hot holding observed at the time of inspection.
- High temperature dishwasher reached 71C or above at plate level during the final rinse.
- Operator with valid foodsafe level 1 training present.

*Replace old sticky traps underneath the dishwasher. No pests observed on glue traps.
*Kitchen area is overstocked boxes of dry rice noodles. Ensure this does not lead to sanitation issues. It is recommended to search for off-site storage (eg. parkade storage lot) to store extra items as storage space is very limited in the facility.
