Observation (CORRECTED DURING INSPECTION): - 0ppm chlorine detected on dish after cycle in low temp, chemical sanitizing dishwasher. Note: Premises had not yet opened for service at time of inspection
Corrective Action(s): - Per code 308, have dishwasher repaired so that it is capable of effectively sanitizing dishes.
- In the interim:
- use single use disposable containers/utensils for food service
- wash dishes/utensils used for food preparation in dishwasher and manually sanitize in 100-200ppm chlorine solution.
- Interim measures were implemented at the time of the inspection. A supply of single use disposable containers/utensils were available. Warewashing sink was filled with chlorine solution verified to be 100ppm chlorine. Manual dishwashing sign provided for reference.

Corrective Action(s): - Repair or replace dishwasher so that it is in good working order and capable of sanitizing dishes.
Note: Operator contacted dishwasher repair company at time of inspection.

Corrective Action(s): - Immediately remove rodenticide from food premises. Use traps (ie. glue boards, snap traps, tin cats) for monitoring and control.

Comments

- Premises was maintained in sanitary condition
- Hot and cold running water present at all sinks
- Handwashing sinks (front and back) were supplied liquid soap and paper towel
- Coolers were operating at 4C or colder.
- Freezers were -18C or colder
- No hot held foods at time of the inspection
- Food contact surface sanitizer present in spray bottles. Concentration: 200ppm chlorine.
- Staff/public washrooms were maintained and supplied with liquid soap and paper towel
- Permit to operate posted *affix current decal to permit
- Operator present and has valid Foodsafe level 1 certificate.
