Observation: Alcohol cooler in bar area was at 11 deg C. No potentially hazardous food items stored inside. Only unopened bottles of alcohol and lemons stored inside.
Corrective Action(s): Operator will be getting the cooler repaired to operate at 4 deg C or less.

Handsinks equipped with hot/cold running water, liquid soap, and paper towels
-->Ensure handsink across cooking line is used for handwashing only
-Walk in cooler at 2.8 deg C
-Walk in freezer was being serviced at time of inspection, internal temperature at -7 deg C to -9 deg C
-Prep cooler drawers on right side (facing cooking line) at 2.1 deg C
-Prep cooler drawers on left side at 1.8 deg C
-inserts vary from 4-6 deg C, inserts are not filled to top and staff indicate they are used within 2 hours
-Hot holding sauces/soups at 60 deg C or greater
-Temperature logs maintained up to date for coolers,
-Foods in walk in cooler are covered
Chemical dishwasher achieved 50 ppm chlorine residual on rinse cycle at dish level
Bar glasswasher achieved 50 ppm chlorine residual on rinse cycle
Ice scoop stored outside of ice box
General sanitation satisfactory (some pooled water on floor underneath dry storage bins as this is located right next to mop sink area-->clean this up)
No signs of pests at time of inspection
FoodSafe certified staff member was on site (sous-chef); as discussed, for any staff that have taken FoodSafe before July 2013, they must renew their FoodSafe level 1 as it is no longer valid.
