Observation: - Boxes of onions stored on the floor

Observation: - Food residue and grime noted on hard to reach areas of floor such as along edges and around wheels/legs of shelving units/equipments.
- Grease build up noted on exhaust canopy vents (Note: professional service not due until Oct 2022)
- Mouse droppings (appear to be from past issues) noted by wheel of dry storage shelving unit
Corrective Action(s): - Move out moveable equipment and thoroughly clean/scrub hard to reach areas of the floor to remove residue, grime, mouse droppings.
- Clean vents from exhaust canopy to remove grease build up. Operator reported they are due to be cleaned Monday.

Comments

- Handwashing sink in kitchen and front service area were supplied with hot and cold running water, liquid soap and paper towel
- Food contact surfaces (eg. cutting boards) maintained in sanitary condition.
- Coolers were operating at required temperatures (4C or colder) and equipped with thermometers. Freezers were maintaining products in a frozen state:
- Temperatures checked:
- Sliding door cooler 4C
- Prep cooler 1C
- Fridge/Freezers 3C/-15C, 2C/-15C
- Beverage cooler (front) 2C
- Small white freezer -15C
- Upright freezer -21C
- Chest freezer -21C
- Hot holding temperature of cooked rice was 71C
- Raw meats stored beneath ready to eat items in coolers.
- High temperature dishwasher operational and met required temperature to sanitize dishes. Measured 73.3C at dish surface.
- Chlorine bleach sanitizer solution present for in use wiping cloths. Concentration measured 200ppm chlorine.
- Pest control contract in place with monthly service. Reviewed most recent service report (28-Jul-2022) which indicates no rodent activity inside.
- Foodsafe requirement met. Operator has valid Foodsafe level 1 certificate (valid until July 2023)
- Staff/public washrooms were supplied with hot and cold running water, liquid soap and paper towel.

* Operator reported additional grease trap is required in premises. Ensure plans are submitted to EHO for review in advance of any changes being made.

Observations and corrective actions reviewed with Operator and a copy of the report was provided.
