Observation: Food debris observed in the front service area under the counter and along the walls that could attract rodents into the facility.
Corrective Action(s): Please regularly clean the hard to reach areas of the kitchen to prevent any build up of food debris and to avoid any pest issues in future.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Front prep coolers recorded below 4C
Internal temperature checked - diced tomatoes at 3.2C & pickled onions at 1.2C.
- Front small cooler at 4C
- Front beverage cooler at 3C
- Front stainless steel cooler at 1.9C
- Back stainless steel cooler at 3.2C
- Back stainless steel freezer at -18C
- Hot holding unit recorded above 60C
Internal temperature of cooked rice at 67C
- Temperature logs were maintained and found up-to-date. Good.

Storage:
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Staff received food delivery today and was in the process of organizing it.

Sanitation & Maintenance:
- Hand wash station (front & back) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray pail available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Utensils and tongs were found in sanitary condition.
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- In Operator's absence, staff has valid FoodSafe Level 1 certificate (Exp April 27, 2027).

Recommendations:
- Please follow cooling curve to cool down hot potentially hazardous food: 60C to 20C within 2 hours and 20C to 4C within next 4 hours.
- Any potentially hazardous food should not be left at room temperature for more than 2 hours.

Overall, facility is well maintained.
