Observation:
Areas of walls in the kitchen (especially corners) have peeling paint, chipped drywall, and exposed wood. All surfaces in food processing and storage areas requires to be made of a material that is durable, smooth, sealed, cleanable, impervious water and of light color.
Corrective Action(s):
Repair or replace all damaged wall areas so they meet health standards.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler was 1C; freezer was -23C; thermometers present; temp. logs done daily.
- High temperature dishwasher was 83C during the rinse cycle, as per the min/max thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Food storage practices done correctly. Stored in food grade containers; covered; date coded; in groups to avoid cross contamination; raw animal proteins on the lowest shelves; and foods 6" off the floor.
- Stock rotation followed (FIFO), stickers indicating which foods to use first placed on food - good.
- Food handling practices done correctly. Utensils used to handle food.
- Sanitation levels is good. No signs of pests.
- FoodSafe certified staff present.
- Improvements to seating area are planned, and a good cleaning of all the walls & ceiling in the kitchen.
