Hand washing sinks have liquid soap and paper towels.
Quats sanitizer in spray bottle - 200ppm.
Dishwasher has a final sanitizing rinse of 71 C or hotter as measured inside of the machine (82 C at the gauge).
Premises is being well-maintained and organized - meat slicer clean, food is covered with clean wrap or lids, raw meats below cooked foods, etc.
Discussed quick cooling of food.
