Routine Inspection:
-Hand washing sink provided with hot and cold running water, liquid soap and paper towels.
-3 compartment sink set up for manual warewashing. Sanitizer compartment registered at 200 ppm for Quats.
-Surface sanitizer for contact surfaces not set up at the time of inspection but was made at the inspection. Operator stated sanitizer only used at the end for cleaning.
***Reminder: Food contact surfaces must be cleaned and sanitized between different uses. Always have sanitizer readily available. Staff are not using re-usable wiping clothes, only single use paper towels are being used.
-Both under the counter coolers at or below 4 degrees C.
-Retail area display cooler at or below 4 degrees C.
-pH test strips available for testing sushi rice acidity level.
-Temperature monitoring records maintained and available for review.
-Permit to Operate posted.
***Reminder: Gloves must be changed and hands must be washed between tasks.
