Observation: Small amount of mice droppings noted in the dry storage room (near a pop-dispenser; between ice-maker and heating tank; on shelves); as well as at the kitchen (behind the dough mixer).

Handsinks supplied with liquid soap, paper towels, hot/cold running water.
Walk in cooler at 2.7C.
Prep coolers <= 4.0C.
Small chest freezer at -18.0 C.
Thermometers for cold units available.
Note: Ice-bath for counter top items on the prep. cooler in use.
Surface sanitizer Quat at 200 ppm - available.
Dishwasher at 100 ppm of Chlorine solution.
Food storage - organized, covered, off the floor.
Fan hood - clean.

Bar:
Alcohol coolers <= 4C.

Friendly reminder:
