Observation: A tray of cooked beef brisket was being cooled and completely syran wrapped (50C). The two buckets of lettuce stored next to the beef brisket were covered with cloth again.
Corrective Action(s): Ensure to cover food after it is properly cooled down otherwise the hot air is trapped inside and food cannot cool properly. Do not use cloth to cover food, use disposable paper towel. Demonstrated to operator.

Observation (CORRECTED DURING INSPECTION): Owner walked out of kitchen without any footwear, he explained it was too hot.
Corrective Action(s): Ensure to wear closed toed shoes during restaurant operation hours so that the hygiene and safety are maintained.

Comments

Food storage in cooler was adequate - no cross contamination or reuse of single use containers.
Besides the lettuce and beef brisket noted above, no other foods being stored at room temperature.
Ceiling light cover has been installed.
Back screen repaired. Mice droppings removed, no further signs of pest noted during this time.
Please continue to monitor for pest activity.
Tin foil removed from shelving units.
