Observation: 1. Food being stored in open tin cans of food. (CORRECTED AT TIME OF INSPECTION)
2. Cardboard used to line packing station. (CORRECTED AT TIEM OF INSPECTION)
3. Containers of food in storage do not have proper lids or covers. This is observed in walk in coolers and freezers.
Corrective Action(s): 1. Do not use open tin cans to store food. They corrode and contaminate the food.
2. Do not use cardboard to line food contact surfaces. They become contaminated and cannot be sanitized.
3. Food should be protected from contamination by using proper food grade covers and lids. Correction required for all inventory in 1 week.

Observation: General cleaning required in kitchen area. Old food debris, dust buildup and grease observed. Focus on areas such as walk in cooler fans and shelves, under deep friers, bulk bin spills and flour and so forth.
Corrective Action(s): Clean and sanitize these areas as needed. Correction required in 1 week.

Observation (CORRECTED DURING INSPECTION): Cells phones observed stored next to food prep stations, such as the cutting board.
Corrective Action(s): Do not store personal items near food storage and preparation areas. Move cell phones to dedicated storage space. Cell phones are contaminated and operator must wash hands after handling the cell phone.
