Observation (CORRECTED DURING INSPECTION): Staff was observed transferring vegetable spring rolls and a cooked product containing quail eggs from room temperature into the refrigeration units at the beginning of the inspection. Internal temperature of the products was above 4 degrees C (approximately 15 to 16 degrees C). Staff informed these products were removed from the refrigeration unit to reheat a few pieces and then left out at room temperature for 1 hour as they forgot to transfer them back into the refrigeration unit.
Corrective Action(s): Potentially hazardous food stored above 4 degrees C for less than 2 cumulative hours was transferred into the refrigeration units by staff during the inspection. Do not leave potentially hazardous food unattended at room temperature to prevent production of harmful bacteria and/or toxin production in the food.

Ensure potentially hazardous food is stored at 4 degrees C or less in a refrigeration unit, OR immediately reheated to at least 74 degrees C upon removing it from the refrigeration unit and then hot-held at 60 degrees C or hotter prior to service. Review the health approved food safety plan with staff.
