Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) The dishwasher rinse did not have any sanitizer in it even after 3 tries.

2) The sanitizer concentration in the buckets and spray bottles was only 50ppm.
Correction: 1) Get the dishwasher serviced. In the meantime, wash the dishes in the dishwasher, then soak them in a sanitizer solution in the sink for 2 minutes, as discussed, before air drying.

2) Refresh all the sanitizer solutions. Ensure you're testing the levels regularly and that you have 200ppm Quats available for use.
