Observation (CORRECTED DURING INSPECTION): Various food items in prep cooler were at 6-8 deg C as cooler.

Corrective Action(s): All foods moved to walk in cooler until prep cooler can consistently maintain internal temperature of 4 deg C or less.

Observation: Some rodent droppings observed (in areas of non-food storage):
1) Around the base of hot water tank
2) Underneath the old refrigerator unit that is not functional (used to store chemicals) in the adjacent room
3) On a carboard box by the toolbox in one of the storage rooms
4) In the corner of the staff washroom.
Corrective Action(s): Correction order issued. Clean all above mentioned areas immediately and sanitize them with a mixture of bleach/water (1000 ppm).

Observation: Various gaps/holes observed throughout premises : in the ceiling tiles in the upstairs storage area, in the staff washroom, by the mop sink
Corrective Action(s): Correction order issued. Seal all gaps per Pest Control Company's recommendation. Pest control visits must be weekly until the EHO has indicated they can be reduced.

Observation: 1) Pooled water on floor beside dishwasher
2) Rodent droppings observed in certain areas (see violation code for premises not free of pests)
3) Areas underneath equipment and around the hot water tank are dirty and need to be thoroughly mopped
Corrective Action(s): Clean all above mentioned areas immediately.

Routine Inspection conducted with pest control company:
Hot/cold running water, Liquid soap and paper towels available at all handsinks

Adjacent unit (where dining seating is):
-back area kitchen is only used to washing/sanitizing dishes
-no food prep/packaging is done in the back area
- walk in cooler at 2 deg C
-High temperature dishwasher achieved 71.2 deg C on rinse cycle

Main unit (where sweets/kitchen is)
-Walk in cooler : 3.0 deg C
-Other than prep cooler, all other coolers at 4 deg C or less
-All freezers at -18 d deg C or less (including the chest freezers and upright freezers in upstairs area)
-Bleach sanitizer in rag bucket at 100 ppm chlorine residual
-3 compartment sink present with bleach available in 3rd compartment at 100 ppm chlorine residual

Correction order issued for pest problems. Follow up to be conducted. Pest control visits must be weekly until further notice.
