Handsinks in kitchen and in front servery area equipped liquid soap, paper towels, and hot/cold running water
-Sashimi display cooler: 2.8 deg C
-Prep cooler : 2.6 deg C
-Upright glass door cooler in kitchen: 3 deg C
-Domestic cooler/freezer in adjacent storage room: cooler at 2.5 deg C and freezer at -17.1 deg C
-Upright glass door cooler in adjacent storage room at 4 deg C
-All freezers at -18 deg C or less (several freezers, both chest and upright, in the adjacent storage room)
-Hot held rice at 64 deg C and hot held miso soup in slow cooker pot in the front area at 68.3 deg C
-High temperature dishwasher achieved 75.1 deg C on rinse cycle (minimum 71 deg C)
-Reminder regarding cooling of chicken (for chicken teriyaki):
