Observation (CORRECTED DURING INSPECTION): Prep cooler is not working. Proteins stored inside the prep cooler were too warm at 10C (must be 4C or below).
Corrective Action(s): They have been moved to another fridge. Do not restock this fridge with proteins, cooked veggetable, eggs and dairy until it is repaired.

Temperature of the dishwasher rinse cycle is satisfactory.
