Comments

It was observed that kitchen utensils were stored in a sanitizer solution. This is no longer recommended. Ensure that ice water is used in the future.

All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
All glasswashers (4) had 12.5 ppm Iodine.
Kitchen dishwasher had 50 ppm chlorine. Daily records are now kept.
Sanitizer bottles found throughout the establishment had 200 ppm quats.
No evidence of pests, pest control reports reviewed during the inspection.
Discussed proper cooling for roasts with the chef. Ensure that any whole meats (eg. whole turkey, beef roasts) are cut into smaller pieces to cool after cooking to prevent the buildup of bacteria.
