Observation: Water dripping from underneath the ice bin at bar area (worn off yellow foaming material) has been idenfied to bar staff.
Corrective Action(s): This could possibly contribute to fruit fly area. Please look into this area to see how water dripping can be eliminated to deter fly harbourage..

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some cleaning has been done but grease build up under cooking area is still identified. Staff informed that the equipment cannot be moved to properly clean underneath.
Corrective Action(s): Please hire a professional to properly clean the flooring and between equipment if existing staff cannot access it.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Water is still leaking from ice machine and staff was unable to get someone in to repair the cooler in the front. A container is being used to catch the water still but fruit flies are noted around this area. No food is stored on the right hand side of the cooler where temperature is measured to be at 8.9C whereas lefthand side of the cooler reads <4C.
Corrective Action(s): Please have a technician service the ice machine and repair the cooler so that there is no more leak and food can be kept at <4C. Retain invoice for above service.

Comments

Kitchen staff has cleaned the wall shelving and placed pizza pans on trays as trays are more easily cleanable than the shelving units.
He has also tried to clean most of the ice machine but cannot access the internal parts where mildew is still present.
Please have a professional company come in to properly clean the ice machine.
Meat slicer has been cleaned.
Bar area overall sanitation has improved and fruit fly activity has reduced significantly. Inside of bar cooler has been cleaned.
However please refer to code 305 above.

*Pest control reports information has not been provided to date. Kitchen staff's foodsafe expires 2022 and owner's is expired in 2020.
No contact from operator to determine if permit needs to be replaced either.
