Observation: Both paper towel dispensers in the kitchen empty. Handwashing procedures not adequate. Staff must use liquid soap and paper towels when washing hands or change gloves when moving between raw and ready to eat foods.
Corrective Action(s): Properly stock all equipment at handwsh stations and ensure these stations are used properly by staff.

Observation: Food containers stored on floor in many places. More and better shelving needed.

Observation: Kitchen observed dirty in many areas of kitchen and the lack of available floor or shelf space is impacting cleaning. Dish sinks observed too dirty; floor around and behind stove and deep friers, under dish sinks, and to a lesser extent in the back dry food storage area of premises observed with excessive food accumulations.
Shoes stored on freezer and in bowl in kitchen. Not a sanitary practice. Fishing tackle box stored in kitchen.
Corrective Action(s): Clean and organize kitchen areas as discussed. Remove grease build up around frier/sotve stations. Review general cleaning practices at follow up inspection date noted.

Comments

Premises remains disorganized and there is too little space for the equipment and food containers used. Food storage is impacting floor space and general movement in kitchen. Over crowded and under-designed kitchen is affecting general cleaning practices. Effort must be taken to better organize kitchen and storage space to allow for safer food operations. Get food off the floor and onto shelves.
Cooling units less than 4 C. Monitor clamshell cooling unit. (I will check again on re-inspection date noted).
Freezers ok.
Dishwasher above 71 C at plate.

**Barrier wall partially constructed but unfinished on kitchen side. Finish this work by next routine inspection.
