Observation: A) Walk-in cooler floor and walls noted dirty. Many containers, including those which could be placed on food counters on the floor. This is both a barrier to good cleaning practices in the walk-in cooler and potential point of cross contamination.
B) Observed greasy cobweb and dust build up on ceiling tile, light fixtures and exhaust fan grates.
Corrective Action(s): Clean up the cooler as discussed. Get containers off the floor.
Discard old or unused containers/equipment as discussed.
Increase cleaning quality or frequency in kitchen area.

Comments

Make sure to throw out containers, equipment etc. from premises to improve space and allow better organization. Purchase additional shelving for walk-in cooler to improve organization, cleaning and ability to keep food containers off floor.

Ceiling tile is acoustic only and not washable. If the ceiling areas can't be washed and better cleaned on a more regular basis the tile will need to be replaced. Should phase out this type of ceiling tile in favour of washable tile. Plan for this in the future.

Cooling units less than 4 C.
Hot holding above 60 C.
Freezers, including those upstairs below -18 C.
Bleach in sanitzer buckets at 100 ppm. Good.
Handwash stations good.

**Make sure to control volumes cooked protein food left or kept at room temperature to two hour window. Discard excess. Fill less and go to main coolers more.

Garbage enclosure noted quite dirty with garbage and stagnant water on the ground surrounding the garbage bin. Much of the garbage observed not related to any of the businesses on this property, but it is nonetheless a potential attractant to rodents and a problem for the neighbourhood. It's time to have this space properly cleaned up. Contact property owner for support in the clean up. All businesses have been made aware for follow up.
