Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottle had no detectable chlorine concentration.
Corrective Action(s): Bleach sanitizer must be maintained between 100ppm to 200ppm to properly sanitize food contact surfaces. To prepare bleach, add 1/2 teaspoon bleach per litre of water. Bleach should be prepared every other day. Bleach at 100ppm was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Raw shelled eggs were stored above pudding.
Corrective Action(s): Ensure raw foods are stored below and separately from ready-to-eat foods to prevent potential contamination of foods. Pudding was moved at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Back door was left open at the time of inspection.
Corrective Action(s): Ensure back door is closed or screen is properly in place to prevent potential pest entry. Back door was closed at the time of inspection.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Spray bottle of water in a similar looking bottle as the bleach was unlabelled.
Corrective Action(s): Ensure all spray bottles are properly labelled to identify their contents to prevent accidental mixing and or misuse of chemicals. Containers will need to be relabelled as needed.

Comments

-Both display coolers were at 4C.
-Prep cooler was at 3C (top and bottom).
-Bakery area cooler was at 4C.
-Customer area coolers were at 2C and 4C.
-Customer area freezer was at -16C.
-Chest freezer was at -16C.
-Perishable food items stored in the cooler units.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Manual warewashing carried out in the 3-compartment sink. Sink plugs and bleach available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Pest issues have improved. Minor pest activity observed in the kitchen. Continue to clean and sanitize affected areas on a daily basis and monitor for pest activity - contact pest control as needed. To prevent pest infestation, ensure the following are carried out: keep the back door closed/screen in place, maintain the facility is a sanitary condition, store foods in pest proof containers (plastic with closing lids).
-Scoops were stored in a sanitary manner.
-Did not observe newspapers or other items stored on top of the mixer unit.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until July 03, 2023.
