Observation (CORRECTED DURING INSPECTION): Lasagna sauce in the hotholding well was at 54 degC. There was only a small amount left in the pan, which was discarded during the inspection.
Corrective Action(s): As discussed, sauce needs to be reheated to 74 degC prior to being placed in the hot well and kept above 60 degC. Reheat the sauce to 74 degC in the microwave as discussed before placing in the hot well.

Observation: Some general cleaning is required.
Corrective Action(s): Sweep under the shelves in the walk-in cooler, clean the inside of the pizza prep cooler. The exhaust hood should be serviced at least once a year and the baffles pulled out and cleaned in between servicing. There's no sticker on the hood indicating when it was last serviced. As discussed, get the hood serviced and have the servicing company put a sticker on the hood indicating the next servicing date.
