203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Improperly cooled cabbage rolls found in stand up cooler.
Corrective Action(s): Four containers of cooked cabbage rolls were found in the stand up cooler - temperature was found to be 35 degrees Celsius. Temperature of cooler was around 10 degrees Celsius. Staff said the cabbage rolls where already in the cooler when they started their shift approximately 1-1.5 hours ago. Foods shall be cooled rapidly down to room temperature before storing in a cooler. Improper cooling of foods can lead to food borne illnesses. Instructed staff to take out the containers of cabbage roll and cool with the lids off, until the food reaches room temperature. Also advised staff to monitor the temperature of the cabbage rolls as they cooled. Temperature of cooler had dropped down to 6-7 degrees Celsius by the end of the inspection. Instructed staff to monitor the cooler temperature to ensure it returns to 4 degrees Celsius or less within the hour, otherwise have the cooler serviced.

Comments

General observations:
All other coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding unit was over 60 degrees Celsius.
Food storage and display practices were good.
Staff hygiene and food handling practices appeared satisfactory.
Hand sinks stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation was satisfactory.
Chemicals stored in a safe manner.
No signs of pests.

Notes:
High temperature dishwasher was out of order at time of inspection and was under repair. Staff indicated the dishwasher was found to be out of order earlier today. Staff demonstrated good knowledge of proper manual warewashing method using the available 2-compartment sink.
Upstairs storage room was not checked as there was only one staff person at time of inspection working in the premise.
