Donair meat shaved off and undergoes 2nd cook step on flat top before placing in warmer. Rice warmer 80 C. Steam table: chicken 65 C, lamb (middle) 71 C, lamb (wall side) 78 C. Sanitizer spray bottle ~ 100 ppm chlorine detectable. Operator able to verbally demonstrated proper manual warewashing procedures. Single use utensils provided for staff as dishwasher is no longer used nor working. Kenmore freezer -19 C. Chest freezer -8 C. QBD cooler 0 C. No signs of pest activity noted.
