Observation:
The back storage/food preparation area has car tires, broken mirrors, broken equipment (freezers) and other items that do not run the business and should not be stored with food. These items could contaminate the food, and makes it difficult to keep the premises clean.
Corrective Action(s):
Remove all items that are broken and do NOT relate to the running of the business.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -11C; hot holding units above 60C; and thermometers present.
- Secondary cook step being done via microwave.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer is spray bottles had [Cl2] above 200ppm.
- FoodSafe certified staff present. Owner refreshed certificate and valid until 2023.
- All foods stored in food grade containers; covered; labeled; in groups with proteins separate or below RTE foods; and 6" off the floor on shelves or racks.
- General sanitation level is satisfactory. No signs of pests.
- Improvement seen in decluttering the back food preparation area, but more work is needed.
- The 3-compartment sink in the food preparation area no longer leaks. All previous violations have been addressed.
- No expired foods in use or for sale. FIFO rules being followed.
