Operator using top inserts of the prep cooler for storage correctly of potentially hazardous foods - good Sanitizer in the 3rd compartment of the 3 compartment sink measured 100 ppm chlorine - good BOH has been cleaned and residual grease on walls and ceiling have been removed - good Duct tape removed from areas of the kitchen (corners, joints, etc) - good Domestic style deep fryer decommissioned. Remove from facility Food was not being prepared in the BOH at the time of inspection. Reviewed expectation with operator that the BOH room with mop sink is not to be used for food preparation.
