Observation (CORRECTED DURING INSPECTION): No time-stamping is occuring as per previous inspection.
Corrective Action(s): Operator to change to system where staff are recording the time the food item is taken out of the cooler and when it is discarded rather than "time cards." Employee to sign off when actions are completed. This is your final chance.

Observation (CORRECTED DURING INSPECTION): Wiping cloths not stored in bleach. Wiping cloths did not have chlorine residual.
Corrective Action(s): Wiping cloths must be stored in bleach sanitizer when not in use.

Observation:
1) Rice bin broken
2) Shelving unit used for vegetables placed directly on the floor
3) Raw eggs placed on middle shelf
4) Frozen fish stored directly in freezer, no cover or bin.
Corrective Action(s):
1) Replace rice bin
2) Do not place any food containers directly on the floor as this contaminates the bottom of the container which is then placed on a food contact surface.
3) Raw eggs must be stored on the bottom shelves in case of breakage.
4) Do not store foods without proper coverage.

Observation: Pork being thawed in stagnant water. Staff turned on water when inspector entered kitchen.
Corrective Action(s): Ensure cold water is running at all times.

General:
- handwashing station stocked with soap, paper towels and hot and cold running water
- sanitizer in bleach bucket measured 200ppm chlorine
- dishwasher dispensed 50ppm chlorine at final rinse cycle
- pest report reviewed - maintain sanitation

Note: Wontons noted at 15C - staff stated they were just boiled and were being run through with cold water to quickly cool
