-General sanitation of premises & equipment was satisfactory. Ensure storage bins on floor under prep table are being moved out to allow for hard to reach areas of the floor to be cleaned thoroughly. Minor amount of food debris/crumbs noted in corners/along edges.
-Handsink supplied with hot & cold water, liquid soap & paper towel. Observed frequent handwashing by food handling staff.
-Walk-in cooler was at 4 deg. C
-Prep cooler was at 4 deg. C
-Countertop prep cooler was at 3 deg. C
-Freezer was at -12 deg. C. Temps being monitored/recorded twice daily
-Bleach sanitizer solution present in a spray bottle at 200 ppm chlorine for use on food contact surfaces. *Label spray bottle to indicate content.
-Bleach present to sanitize dishes. Manager knowledgeable about manual warewashing procedures. Test strips present for checking sanitizer concentration.
-No pest activity noted at the time of the inspection. Pest control contract in place with monthly service. Service reports reviewed at the time of the inspection.
>> Be aware of keeping the floor area clear to facilitate cleaning and monitoring for pest activity.
-Time tracking in place for pizza on display. Pizza is discarded if not sold within 2 hrs.
-Manager present at time of inspection & holds valid Foodsafe level 1 certificate (valid until Jan 2021).
