Walk-in, salad storage, and sandwich prep coolers are at 4 C or colder.
Crackling for gravy is stored in the walk-in cooler and is labelled and dated.
Hot holding units: chicken hot holding is being pre-warmed to >60 C, gravy >60 C - good.
Freezer - unable to check today (delivery just received).
Hand washing stations in the chicken prep area and in the sandwich prep/front service area both have hot/cold water, liquid soap and paper towels in dispensers.
*** The staff washroom hand sink has liquid soap and paper towels however the paper towel dispenser is not dispensing the paper towels properly - Fix dispenser prior to lunch service.
Quats sanitizer is being used to manually sanitize utensils and it is also used for wiping cloths used to sanitize counters and food contact surfaces.
Premises has been cleaned. Grease trap is cleaned out regularly and more often if necessary (as per manager).
