- General sanitation good at the time of inspection. - Walk-in coolers at or below 4C. - Walk-in freezer at -18C. - Prep coolers (4) at or below 4C. - Dairy cooler at 4C. - Upright freezer was at -14C. - Hot holding at 72C at the time of inspection. - High temperature dishwasher (new from last month) had a final rinse temperature of 77C on the dish surface (minimum of 71C required for proper sanitizing). - Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels. -Quats sanitizer spray bottle labelled (200ppm). -Meat slicer - clean and sanitary. -Foods stored off the ground and protected from potential contamination. -Facility serviced by a professional pest control operator. Traps are set. No signs of pests noted at the time of inspection.
