Observation (CORRECTED DURING INSPECTION): 2 sanitazing spray bottles measured at 10 ppm quaternary ammonium solution. 200 ppm is required for proper sanitation.
Corrective Action(s): Discard the solution from both bottles and refill them at the quaternary ammonium dispenser. Clean and sanitize all food contact surfaces in the kitchen area. Obtain quaternary ammonium test strips for daily testing.

Observation: Food and dirt debris build up observed at the following locations:
- Underneath the cooking equipment in the front area.
- Underneath the under counter cooler in the kitchen.
- Underneath the dishwashing area.
Corrective Action(s): Clean the above mentioned areas and any hard to reach areas. Follow your sanitation plan for daily and weekly cleaning procedures and schedules. Correct by: today.

- All coolers (under the counter, 2 prep, walk-in and beverage) maintained at or below 4C.
- Up right freezer at -18C.
- Soups hot held at 65C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 100 ppm chlorine solution dispensed from low temperature dishwasher.
- 200 ppm quaternary ammonium available from the dispenser.
- 12.5 ppm iodine dispensed from the glass washer.
- Sous vide station satisfactory. Sous vide products were seared after cooking.
- No pest activities observed.
- Temperature logs maintained and available for review.
