Observation (CORRECTED DURING INSPECTION): Knives stored in the knife holder had many dried food particles stuck to them.
Corrective Action(s): Clean and sanitize all knives. Ensure they are clean and sanitized after use and before returning them to the knife holder.

Observation (CORRECTED DURING INSPECTION): Sanitizer for food contact surfaces was not available in the kitchen.
Corrective Action(s): Prepare 100-200 ppm bleach sanitizer and ensure food contact surfaces are sanitized regularly.

Observation (CORRECTED DURING INSPECTION): Basket of noodles was stored in the kitchen hand washing station. Access to this hand washing station was also blocked by dry food bins.
Corrective Action(s): Do not store anything in the hand washing station. Ensure access to the hand washing station is always clear.

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers are ≤ 4°C, freezers are ≤ -18°C, hot holding units are ≥ 60°C. Ensure hot foods are stirred often.
- Two compartment sink is available for manual dishwashing. Reviewed manual dishwashing procedures. Provided manual dishwashing sign for two compartment sinks.
- 200 ppm bleach sanitizer is available (after correction)
