Observation: Rodent droppings noted along the walls of dry storage area. When inquired, operator is aware and is actively cleaning and sanitizing regularly. School has a pest management contract.
Corrective Action(s): Required operator to remove all droppings, clean and sanitize the area. Ensure to regulary clean the area to sanitary and monitoring purposes.

Hot holding units were on but did not have foods in them. Ensure to have the units at minimum 60 C before putting foods in the units.
