Follow-up inspection

First row of display cooler has inserts registering between 4-10 C.
Any potentially hazardous food that is above 4 C, can only be used for a maximum of 2 hours. Staff indicated items are re-stocked multiple times a day.
Ensure timers are put in place and temperature records are maintained.
Document the time food was placed in inserts and the time it was discarded.
Timers and logs will be verified at the next routine inspection.
Note: commercial coolers should be able to maintain a temperature of 4 C or below and should not have major fluctuations in temperature even if the surrounding area is warm - please have this cooler serviced.
