Observation (CORRECTED DURING INSPECTION):
1) Large buckets of butter chicken sauce noted in cooler, measuring 71C
2) Pan of chicken fillets by dishwashing sinks
Corrective Action(s):
All foods must be cooled from 60-20C in 2 hours or less, and from 20-4C in 4 hours or less.
1) Staff immediately began to cool in water baths
2) Staff stated fillets were cooked less than 2 hours ago, immediately move these to the cooler

- sanitizer measured 100ppm chlorine - ensure wiping cloths are stored inside when not in use
- dishwasher reached 78C at final rinse cycle
- improved sanitation from last inspection has been maintained - good
