Comments

Hand washing sink has liquid soap and paper towels.
Coolers are at 4 C or colder (2 upstairs and 2 downstairs).
Freezers used to store fish are well below -20C. Fish is stored in these freezers and rotated FIFO.
Receipts from suppliers also indicate that the fish, salmon and seafood items are frozen for at least 7 days at -20C. - good.
Cooked soups have just been made. If not being held hot above 60C - actively cool from 60 - 20 in 2 hours or less and 20- 4 C in 4 hours or less.
Prep sink is available in kitchen.
Dishwasher has a final sanitizing rinse. Temperature measured inside of the machine is 71 C and 82 C+ (180F +) is shown on the gauge. - good.
Chlorine sanitizer in the spray bottle has 200ppm chlorine - good. Use on wiping cloths and food contact surfaces.
