Observation (CORRECTED DURING INSPECTION): - A bucket of Greek Yogurt sitting in a chest freezer with a few other buckets of fetta cheese.
- Fetta cheeses measured at -1.3~ 1.8C
- Greek yogurt measured at 9C ambient air temperature.
Corrective Action(s): - Operator reduced the amount of Greek cheese in the bucket and let the bucket sitting deeper in the chest freezer.
- Greek Cheese measured 3.7C

Comments

Routine inspection conducted with the presence of 3 food operators. There was one correction during inspection that needs operators' attention.

- General sanitation - Great! All the foods well organized.
- Hand wash station and staff washroom fully equipped with hand soap, paper towel and hot/cold running water.
- 3 Display coolers at the retail floor < 2C
- Walk in cooler 3.3C. Foods were well protected from contamination / cross contamination.
- Chest freezer in the back room -21.1C, upright freezer at the front -23.1C
- 3 meat slicers was in a sanitary condition and in frequent use. Operator disassemble the slicer, clean and sanitize with 200ppm bleach after each use or between meat and cheese.
- 2 - compartment sink available for washing and sanitizing utensils. 200 ppm bleach tested in the bucket.
- Dry storage room well maintained.
- Randomly checked the Best Before Date for fish and other canned foods. All in good condition. No dented / bulky can, no expired foods observed. Turnover rate is high.
- Receiving rolling door and man door sealed tight. No pest activity observed during inspection.
